Now that the weekend is coming up, I thought that I would share my favorite recipe for protein pancakes.
This recipe works every time and it’s so easy, because you can mix all the ingredients directly in a blender. The texture is very similar to ‘real’ pancakes and if you use a good quality protein powder you can get away without any bad aftertaste.
This recipe is for a quite large portion, but I like to make a lot so that I have enough for the whole weekend:
4 dl milk
2 ripe bananas
100 g oatmeal/rye grains or similar
120 g protein powder (I prefer vanilla- I use this from the Swedish company Holistic)
3 whole eggs
2 teaspoons baking powder
Mix all ingredients in a blender until you have a smooth mixture – then make pancakes! Serve with fresh fruit and peanut butter or whatever you like 🙂
